Our chef, Lukas Pfaff, was born in the Black Forest of southwest Germany. He spent his youth in London and learned his craft from top chefs such as Marco Pierre White and Anton Mosimann. He has lived in Switzerland since 2016 and has been enchanting guests at the Romantik Hotel Muottas Muragl for three years. In the meantime, the big city man feels at home on Muottas Muragl and has become a big Engadin fan. When he's not picking porcini mushrooms or herbs for his next creations, he spends his free time enjoying the peace and quiet of fly fishing, exploring the area on his Vespa or whizzing down the ski slopes.
Months before the creative chef creates new menus for Muottas Muragl, he finds out about seasonal products and exchanges ideas with regional suppliers. Lukas Pfaff then writes down his ideas, tries them out and experiments until he is satisfied. The menu in the Panorama Restaurant is always adapted to the season and is made up of traditional-style dishes with a pinch of exoticism. For the «spice freak», as he calls himself, his love of Asian cuisine always comes through, which is much appreciated by the guests.
In addition to seasonal and regional products, the Restaurant on Muottas Muragl also attaches great importance to handicraft. All pasta varieties and also the traditional capuns are prepared by hand and with a lot of love. With the help of his team, the chef gives all dishes a personal touch - in keeping with the motto: Less is more.
